Some good food

Meatloaf

I didn't grow up eating Meatloaf. In fact I don't recall my mother ever making it. I had a boyfriend though that loved it and he made a pretty good one. This isn't his recipe LOL This recipe is adapted from Saving Dinner. The way I make it, it doesn't stay together as well as I'd like, but it tastes SO good, that it doesn't matter.

Barbecue Meatloaf
Preheat oven 375˚

2 pounds meatloaf mix (usually hamburger and pork) or just hamburger.
1-2 t chili powder
Salt and Pepper to taste
4 oz can of corn kernels, drained
1 small jar of Pimentos, drained (2-3 oz)
1 onion chopped (you know how much onion you'd like - I use one large onion coarsely chopped)
1 can mushrooms, drained (press out as much water as possible) and coarsely chopped.
5 slices of bread - tear it, cut it, just get it into smallish pieces.
3 large eggs slightly beaten
2/3 cup barbecue sauce. We love Sonny's Sweet BBQ sauce.

You will need a large baking sheet with sides (I put parchment paper on it - but not mandatory)

Combine all ingredients into a bowl and mix with your hands. Place the mixture in a loaf like blob on the baking sheet. Bake for one hour or until cooked through. I usually put a thin layer of BBQ sauce over the top of the meatloaf after about 45 minutes.

Let stand for a few minutes before cutting. This meatloaf freezes beautifully and makes great leftovers.

Serve with baked sweet potatoes or a salad or both!

  1. there are so many meals i used to wrinkle my nose at, as a kid, that today i love. i never wanted to eat meatloaf. but my hubby liked it, so occasionally i make it, and i actually like it now. i'll have to give this recipe a try.

    random... but when i was a kid, my mom used to make this curry cheese ball, that i hated. i even went as far as telling guests that it was gross. now, it's one of my favorites.

    Thank you for visiting. I don't think I could ever flip a house...though I've loved watching the shows that do that. This job has been so crazy (I know we're starting from the ground up), but I think I could only do this one time!
